@vmbrasseur Yep, I'll be scouring the glutamates looking for better umami that fits Asian cuisine; tomato paste may. Tblspn brewer's yeast?

@vmbrasseur One consideration, vegetarians may eschew "too meaty', like a vegan tempeh-based brown gravy can be.

@vmbrasseur Fermented blk beans is clever; small amounts + browned tempeh in broth might boost umami w/out "too meaty"-problem.
