
It's true that the origins of life are not known. The primordial soup theory is a lot more complex than soup in a beaker though. There are a number of theories. Nobody knows. The soup theory is the most popular in science fiction, but isn't even well agreed upon as that basis.
But anyway, evolution is a process, and could happen after a variety of instantiations, even something more spontaneous.
