@Jason Self I completely agree. If anything, I think the more worthwhile effort is to point to vegan cuisines that don't attempt to emulate meat dishes. Vegan burgers are often disappointing not because of their own merit, but in the fact that they attempt to recreate an expectation that has already been set by the competing palette. In that sense, it is often a disappointing experience.
