    @jacobwb Also, with Dovecot I recommend putting in Dovecot Pigeonhole for sieve/managesieve - that way you can configure rules easily.

    @jacobwb I don't see the need for Courier. For SASL and IMAP/POP just use Dovecot. Cleaner and simpler.
